Mocha Victoria Sponge

This is my second entry for the year 2013. Here is the recipe from 500 Cakes And  Bakes by Martha Day.

Makes one 7 in round cake
175 gr salted butter
175 gr caster sugar ( i used only 155 gr)
   3 eggs
175 gr self raising flour ( i used only 160 gr)
    1 tbsp strong black coffee
    1 tbsp unsweetened cocoa powder mixed with 1-2 tbsp boiling water

For coffee buttercream :
I used my own buttercream recipe mixed with mocha paste

Method :
1. Preheat the oven to 160 C. Grease and base-line two 7 in shallow round cake tins (pans). Cream the butter and sugar in large bowl until light and fluffy. Add the eggs, one at a time, beating well after each addition. Fold in the flour.
2. Divide the mixture between two bowls. Fold the coffee into one and the cocoa mixture into the other.
3. Place alternate spoonfuls each mixture side by side in the cake tins. bake for 25-30 min. turn out on to a wire rack to cool.
4. Sandwich the cakes, bases together, with a third of the buttercream. Cover the top and side with the remainder.
